Ingredients

  • 2 cups Heavy whipping cream
  • 0.75 cup Granulated sugar
  • 1 tablespoon Unflavored gelatin powder
  • 0.25 cup Cold water
  • 1 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh berries or fruit compote (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the heavy whipping cream and granulated sugar. Heat over medium heat, stirring frequently, until the sugar is completely dissolved, but do not let the mixture come to a boil. Remove from heat.

Step 2

In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for 5 minutes to bloom (the gelatin will absorb the water and become thicker).

Step 3

While the gelatin is blooming, allow the cream mixture to cool slightly for about 5 minutes so it's not too hot when blended with the gelatin.

Step 4

After the gelatin has bloomed, add it to the warm cream mixture and whisk until the gelatin is fully dissolved.

Step 5

Gently whisk in the sour cream and vanilla extract until the mixture is smooth and fully combined.

Step 6

Pour the mixture evenly into 6 small serving glasses or ramekins. Allow them to cool to room temperature before covering with plastic wrap.

Step 7

Refrigerate for at least 4 hours, or until the creme is fully set.

Step 8

Before serving, garnish with fresh berries or a spoonful of fruit compote for added flavor and presentation (optional).
