Inspect the soft-shell crabs. Using kitchen scissors, remove the face (located just behind the eyes) and discard. Lift the top shell on each side and remove the gills. Gently rinse the crabs under cold water and pat them dry with paper towels.
In a shallow dish, mix the flour, salt, and ground black pepper. Dredge each crab lightly in the flour mixture, shaking off any excess.
Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat until the butter melts and starts to bubble.
Place the crabs in the skillet, top shell side down first, and sauté for 3-4 minutes. Flip the crabs carefully and cook for an additional 3-4 minutes, or until both sides are golden and the crabs are cooked through. Remove the crabs from the skillet and set aside on a plate lined with paper towels.
