Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup pineapple juice (from canned pineapple or fresh)
  • 0.25 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 green onions, chopped (optional for garnish)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 cups cooked white rice (for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces. Season with salt and black pepper, and set aside.

Step 2

In a small bowl, whisk together the pineapple juice, soy sauce, honey, brown sugar, minced garlic, and grated ginger. Set this sauce mixture aside.

Step 3

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Step 4

Add the chicken pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and cooked through. Remove the cooked chicken from the skillet and set aside on a plate.

Step 5

In the same skillet, add the pineapple chunks and sauté for 2-3 minutes until lightly caramelized.

Step 6

Pour the prepared sauce mixture into the skillet and bring to a gentle simmer.

Step 7

In a small bowl, mix the cornstarch and water to create a slurry. Gradually stir this slurry into the simmering sauce, cooking for 2-3 minutes or until the sauce thickens.

Step 8

Return the cooked chicken to the skillet and stir to coat it in the sauce. Cook for an additional 2 minutes to heat everything through.

Step 9

Remove the skillet from the heat and sprinkle with chopped green onions, if desired.

Step 10

Serve hot over cooked white rice and enjoy this flavorful dish!
