Ingredients

  • 1 9-inch Pie crust (store-bought or homemade)
  • 6 tablespoons Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 0.75 cup Light corn syrup
  • 1 teaspoon Pure vanilla extract
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 1.5 cups Pecan halves

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the pie crust into a 9-inch pie pan. If you're using a homemade crust, roll it out and fit it into the pan. Crimp the edges for a decorative touch, if desired. Set the crust aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Once melted, remove the pan from heat.

Step 4

Stir in the granulated sugar, brown sugar, and light corn syrup until the mixture is fully combined and smooth.

Step 5

Add the vanilla extract and salt to the mixture, then stir in the eggs one at a time, mixing well after each addition.

Step 6

Fold in the pecan halves to coat them evenly in the filling mixture.

Step 7

Pour the filling into the prepared pie crust, making sure the pecans are evenly distributed.

Step 8

Transfer the pie to the preheated oven and bake for 50-55 minutes, or until the filling is set and no longer jiggles in the center when gently shaken.

Step 9

Remove the pie from the oven and allow it to cool completely on a wire rack. This step is critical, as the filling sets as it cools.

Step 10

Once cooled, slice and serve. Enjoy Sheila's Pecan Pie plain, or top with whipped cream or a scoop of vanilla ice cream for an extra treat.
