Ingredients

  • 8 eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup chopped spinach
  • 1 cup chopped cooked ham or cooked sausage
  • 0.5 cup diced onion
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried Italian herbs (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil or cooking spray.

Step 2

In a skillet over medium heat, warm the olive oil and sauté the diced onion and bell peppers for 4-5 minutes until softened. Set aside to cool slightly.

Step 3

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and Italian herbs (if using) until fully combined.

Step 4

Stir in the cooked vegetables, chopped spinach, shredded cheddar cheese, and chopped ham or sausage into the egg mixture.

Step 5

Pour the mixture evenly into the prepared baking dish, spreading the ingredients out for even distribution.

Step 6

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the omelette is puffed and lightly golden on top and a toothpick inserted in the center comes out clean.

Step 7

Remove from the oven and let it cool for 5 minutes before slicing into squares or rectangles.

Step 8

Serve warm as-is or with a side of toast, fresh fruit, or a light salad for a complete brunch.
