Ingredients

  • 3 cups Cooked white rice (preferably day-old)
  • 2 tablespoons Vegetable oil
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 cup Frozen peas and carrots mix
  • 2 stalks Green onions, chopped
  • 2 large Eggs
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Ensure the cooked white rice is chilled (day-old rice works best for fried rice as it reduces moisture content).

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Crack the eggs into the skillet and scramble them until fully cooked. Remove the cooked eggs from the skillet and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the skillet. Toss in the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

Add the frozen peas and carrots mix to the skillet and cook for 2-3 minutes until they are tender.
