Ingredients

  • 4 medium potatoes
  • 3 tablespoons unsalted butter
  • 0.5 pounds breakfast sausage
  • 1 medium yellow onion
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons chopped parsley (optional)

Directions

Step 1

Peel and dice the potatoes into small cubes, about 1/2-inch in size.

Step 2

Heat a large skillet over medium heat and melt the unsalted butter.

Step 3

Add the diced potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until they are golden brown and tender. Remove the potatoes from the skillet and set aside.

Step 4

In the same skillet, cook the breakfast sausage over medium heat, breaking it into small crumbles with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Drain any excess grease if necessary.

Step 5

Dice the onion and add it to the sausage in the skillet. Cook for 3-4 minutes or until the onion is soft and translucent.

Step 6

Return the cooked potatoes to the skillet, stirring to combine with the sausage and onion. Season with salt and black pepper.

Step 7

Crack the eggs directly into the skillet over the potato mixture. Use a spatula to gently break the yolks and stir lightly to combine, cooking the eggs to your desired doneness, about 3-5 minutes.

Step 8

Sprinkle the shredded cheddar cheese evenly over the top of the skillet mixture. Cover the skillet with a lid and let the cheese melt, about 2-3 minutes.

Step 9

Optional: Garnish with freshly chopped parsley before serving.

Step 10

Serve hot directly from the skillet and enjoy!
