Ingredients

  • 6 pieces Large eggs
  • 3 tablespoons Mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Hot sauce (such as Sriracha or Tabasco)
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Apple cider vinegar
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 6 pieces Jalapeño slices (optional, for garnish)
  • 1 tablespoon Fresh chives, minced (optional, for garnish)

Directions

Step 1

Place the eggs in a medium saucepan and cover them with cold water so the water is 1 inch above the eggs.

Step 2

Bring the water to a rolling boil over medium-high heat. Once boiling, remove the pan from the heat, cover it with a lid, and let the eggs sit for 10 minutes.

Step 3

While the eggs are sitting, prepare a large bowl of ice water. After 10 minutes, transfer the eggs to the ice water and let them cool for 5 minutes.

Step 4

Peel the eggs under cool running water for easier shell removal. Cut each egg in half lengthwise and gently scoop out the yolks into a medium bowl.

Step 5

Mash the yolks with a fork until crumbly, then mix in mayonnaise, Dijon mustard, hot sauce, smoked paprika, apple cider vinegar, salt, and black pepper until the filling is smooth and creamy.

Step 6

Transfer the egg yolk mixture to a piping bag or resealable plastic bag with a corner snipped off. Pipe the filling back into the hollowed-out whites of the eggs.

Step 7

For an extra kick, top each deviled egg with a slice of jalapeño and a sprinkle of minced chives, if desired.

Step 8

Serve immediately or refrigerate for up to 4 hours before serving.
