Ingredients

  • 1 lb Ground beef (80/20)
  • 1 lb Ground pork
  • 0.75 cup Breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 2 large Eggs
  • 0.25 cup Milk
  • 3 cloves Minced garlic
  • 0.25 cup Chopped fresh parsley
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil (for browning)
  • 2 cups Marinara sauce (for serving)

Directions

Step 1

In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, eggs, milk, garlic, parsley, oregano, salt, and black pepper.

Step 2

Mix the ingredients gently with your hands until just combined. Be careful not to overmix, as this can make the meatballs dense.

Step 3

Using a tablespoon or small ice cream scoop, portion the meat mixture and roll it into balls about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Step 4

Heat olive oil in a large skillet over medium heat.

Step 5

Working in batches, brown the meatballs on all sides, about 6-8 minutes per batch. The meatballs do not need to be fully cooked at this stage as they will finish cooking in the sauce.

Step 6

Transfer the browned meatballs to a plate and set aside.

Step 7

In the same skillet, add the marinara sauce and bring it to a simmer.

Step 8

Gently place the meatballs into the sauce and spoon some sauce over each one to coat.

Step 9

Cover the skillet with a lid, reduce the heat to low, and let the meatballs simmer in the sauce for 15-20 minutes, or until fully cooked (internal temperature of 165°F).

Step 10

Serve the meatballs hot with pasta, in a roll as a meatball sub, or simply with a sprinkle of Parmesan and fresh parsley.
