Ingredients

  • 1.5 pounds beef sirloin
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 2 large eggs
  • 4 cups vegetable oil

Directions

Step 1

Trim any excess fat from the beef sirloin and cut it into thin strips approximately 1/2 inch wide and 3 inches long.

Step 2

In a medium bowl, combine the buttermilk and hot sauce. Place the steak strips into the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or up to overnight for maximum tenderness and flavor.

Step 3

In a shallow dish, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, black pepper, and salt.

Step 4

In a separate bowl, beat the eggs and set aside.

Step 5

Heat the vegetable oil in a large, deep skillet or Dutch oven to 350°F (175°C). Use a thermometer to maintain the correct frying temperature.

Step 6

Remove the steak strips from the buttermilk mixture, allowing any excess liquid to drip off. Dip each strip into the flour mixture, then into the beaten eggs, and back into the flour mixture to coat well. Shake off any excess flour.

Step 7

Carefully lower the coated steak strips into the hot oil, working in batches to avoid overcrowding the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy.

Step 8

Using a slotted spoon, transfer the cooked steak fingers to a plate lined with paper towels to drain excess oil.

Step 9

Serve warm with your favorite dipping sauce, such as ranch dressing or creamy horseradish.
