Ingredients

  • 150 grams Thinly sliced country ham
  • 2 large Ripe but firm pears
  • 50 grams Parmesan cheese
  • 3 tablespoons Pine nuts
  • 1 handful Arugula (optional for garnish)
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Preheat a dry skillet over medium heat. Add the pine nuts and toast them, stirring occasionally, for about 2-3 minutes or until golden brown and fragrant. Remove from heat and set aside to cool.

Step 2

Wash and dry the pears. Cut each pear into quarters and remove the core. Using a mandoline or a sharp knife, thinly slice the pear quarters lengthwise.

Step 3

Using a vegetable peeler or mandoline, shave the Parmesan into thin ribbons.

Step 4

On a large serving platter or individual plates, arrange the pear slices in an overlapping fan pattern. Drape the thin slices of country ham between the pear slices.

Step 5

Scatter the shaved Parmesan and toasted pine nuts evenly over the pears and ham.

Step 6

In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper to make a light dressing.

Step 7

Drizzle the dressing over the assembled dish, being careful not to drench the ingredients. Add a handful of arugula on the side or as a garnish, if desired.

Step 8

Serve immediately and enjoy the balance of sweet, salty, and nutty flavors in this elegant appetizer or light salad.
