Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Granulated sugar
  • 0.5 teaspoons Kosher salt
  • 0.5 cups Unsalted butter (cold, cubed)
  • 1 cup Sharp old cheddar cheese (shredded)
  • 0.75 cup Whole milk
  • 1 unit Large egg
  • 6 ounces Smoked salmon (thinly sliced)
  • 4 ounces Cream cheese (softened)
  • 2 tablespoons Fresh dill (chopped)
  • 1 teaspoon Lemon zest
  • 0.25 teaspoons Fresh ground black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Step 3

Using a pastry cutter or your fingertips, cut in the cold butter until the mixture resembles coarse crumbs.

Step 4

Stir in the shredded cheddar cheese.

Step 5

In a small bowl, whisk together the milk and egg. Reserve about 1 tablespoon of this mixture for brushing the tops of the scones.

Step 6

Create a well in the center of the dry ingredients, pour in the wet ingredients, and gently mix until the dough just comes together. Be careful not to over-mix.

Step 7

Turn the dough out onto a lightly floured surface and pat it into a 1-inch-thick round disk. Cut the dough into 8 wedges and transfer them to the prepared baking sheet.

Step 8

Brush the tops of the scones with the reserved milk-egg mixture.

Step 9

Bake for 12-15 minutes, or until the scones are golden brown. Allow them to cool slightly on a wire rack.

Step 10

While the scones are cooling, prepare the cream cheese spread by mixing the softened cream cheese, dill, lemon zest, and black pepper in a small bowl.

Step 11

Once the scones have cooled to room temperature or slightly warm, slice them horizontally in half.

Step 12

Spread a generous layer of the cream cheese mixture on the bottom half of each scone.

Step 13

Layer each with a portion of smoked salmon and place the top half of the scone back on top.

Step 14

Serve immediately and enjoy your Sharp Old Cheddar Scones with Smoked Salmon!
