  • 1 cup Frozen corn
  • 1 cup Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 3 cups Tortilla chips, slightly crushed
  • 2 stalks Green onions, sliced (for garnish)
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, cook the ground beef over medium heat until it is fully browned, about 5–7 minutes. Drain excess fat if necessary.

Step 3

Add the diced onion and garlic to the skillet and cook for another 2–3 minutes until softened and fragrant.

Step 4

Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and frozen corn. Allow the mixture to simmer for 5 minutes, stirring occasionally.

Remove the skillet from heat and stir in the sour cream until fully combined.
