Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 0.5 teaspoon pepper
  • 0.75 teaspoon salt
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 3 cups cooked white rice
  • 1.5 cups crushed Ritz crackers
  • 4 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with butter or non-stick spray and set aside.

Step 2

Bring a pot of water to boil and cook the chicken breasts until no longer pink inside, about 12–15 minutes. Remove the chicken, allow it to cool slightly, and then shred it into bite-sized pieces.

Step 3

In a medium saucepan, melt 3 tablespoons of butter over medium heat. Whisk in the flour and cook for 1–2 minutes to form a roux.

Step 4

Gradually add the chicken broth and whisk continuously until the mixture is smooth. Reduce the heat to low and stir in the heavy cream, garlic powder, salt, and pepper. Let the sauce thicken, about 5 minutes.

Step 5

In a large mixing bowl, combine the shredded chicken, cooked rice, broccoli florets, cheddar cheese, and the cream sauce. Mix until everything is well coated.

Step 6

Transfer the mixture to your prepared casserole dish and spread it out evenly.

Step 7

In a separate bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.

Step 8

Bake in the preheated oven for 25–30 minutes, or until the casserole is bubbly and the topping is golden brown.

Step 9

Allow the casserole to cool for 5–10 minutes before serving. Enjoy!
