Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Baking powder
  • 2 tablespoons Olive oil
  • 0 as needed Nonstick cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper and lightly coat them with nonstick cooking spray.

Step 2

Peel the potatoes and onion. Grate them using a box grater or food processor with a grating attachment.

Step 3

Transfer the grated potatoes and onion to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible, then place the mixture in a large mixing bowl.

Step 4

Add the eggs, flour, kosher salt, black pepper, and baking powder to the potato mixture. Mix until well combined and the batter holds together.

Step 5

Use a tablespoon to scoop out small mounds of the mixture. Flatten each mound slightly into a round pattie about 2-3 inches in diameter.

Step 6

Arrange the latkes on the prepared baking sheets, leaving a small space between each one. Brush the tops lightly with olive oil to help them crisp up in the oven.

Step 7

Bake in the preheated oven for 12 minutes. Carefully flip the latkes over and bake for an additional 12-13 minutes, or until golden brown and crispy on both sides.

Step 8

Remove from the oven and let cool slightly before serving. Serve warm with applesauce, sour cream, or your favorite toppings!
