Ingredients

  • 4 pounds Pork spareribs
  • 2 tablespoons Kosher salt
  • 1 tablespoon Black pepper
  • 1 tablespoon Paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Smoked paprika
  • 1 cup Brown sugar
  • 1 cup Apple cider vinegar
  • 1.5 cups Ketchup
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons Yellow mustard
  • 2 tablespoons Honey
  • 1 teaspoon Liquid smoke (optional)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Rinse the pork spareribs and pat them dry with paper towels. Remove the membrane from the back of the ribs for better texture (use a paper towel for grip if needed).

Step 3

In a small bowl, whisk together the kosher salt, black pepper, paprika, garlic powder, onion powder, and smoked paprika to create a dry rub.

Step 4

Generously season both sides of the spareribs with the dry rub, pressing it into the meat to ensure it adheres.

Step 5

Wrap the ribs tightly in aluminum foil, creating a sealed packet, and place them on a baking sheet. Bake in the oven for 2.5 hours or until the meat is tender and starts to pull back from the bone.

Step 6

While the ribs are cooking, prepare the barbecue sauce. In a medium saucepan, combine the brown sugar, apple cider vinegar, ketchup, Worcestershire sauce, yellow mustard, honey, and liquid smoke (if using).

Step 7

Simmer the sauce over low heat, stirring occasionally, for 15–20 minutes until it thickens slightly. Adjust sweetness or acidity as desired.

Step 8

Once the ribs are done cooking, carefully remove them from the oven and unwrap them from the foil. Transfer the ribs to a grill heated to medium-high heat.

Step 9

Brush a generous layer of barbecue sauce over the ribs and grill each side for 5–7 minutes, basting frequently with more sauce, to caramelize the glaze and add a slight char.

Step 10

Remove the ribs from the grill and let them rest for 5 minutes before cutting them into individual portions.

Step 11

Serve the ribs hot with extra barbecue sauce on the side for dipping.
