Ingredients

  • 12 oz fettuccine pasta
  • 1 lb shrimp (peeled and deveined)
  • 4 tbsp butter (divided)
  • 4 cloves garlic (minced)
  • 2 cups heavy cream
  • 1.5 cups Parmesan cheese (grated)
  • 2 tbsp parsley (chopped, optional for garnish)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

Step 2

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the shrimp, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, and cook for 2-3 minutes per side, or until the shrimp are opaque and lightly golden. Remove shrimp from the skillet and set aside.

Step 3

In the same skillet, melt the remaining 3 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 4

Slowly pour in the heavy cream and bring it to a gentle simmer. Stir constantly to ensure it doesn’t scorch. Let the cream simmer for 3-4 minutes to thicken slightly.

Step 5

Gradually whisk in the grated Parmesan cheese, stirring until the sauce is smooth and creamy. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

Step 6

Season the Alfredo sauce with the remaining 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the optional red pepper flakes for a hint of spice.

Step 7

Add the cooked shrimp back into the skillet, along with the cooked fettuccine. Toss everything together until the pasta is fully coated and the shrimp is warmed through, about 2 minutes.

Step 8

Garnish with chopped parsley, if desired, and serve immediately. Pair with garlic bread or a fresh salad for a complete meal.
