Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 1 large red bell pepper, diced
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 28 ounces canned diced tomatoes, with juice
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 large eggs
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 0.25 cup fresh parsley, chopped (for garnish)
  • 0.5 cup crumbled feta cheese (optional)
  • 1 loaf crusty bread or pita, for serving

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until softened.

Step 3

Stir in the minced garlic, cumin, paprika, coriander, and cayenne pepper (if using). Cook for 1-2 minutes until fragrant.

Step 4

Add the canned diced tomatoes, tomato paste, salt, and black pepper to the skillet. Stir well to combine.

Step 5

Simmer the sauce over medium-low heat for 10-15 minutes, stirring occasionally, until it thickens slightly.

Step 6

Use a spoon to make small wells in the sauce, and crack one egg into each well.

Step 7

Cover the skillet with a lid and cook for 5-8 minutes, or until the egg whites are set but the yolks remain runny (or longer if you prefer firmer yolks).

Step 8

Remove the skillet from the heat and garnish with chopped cilantro, parsley, and crumbled feta cheese if desired.

Step 9

Serve hot with crusty bread or pita for dipping into the sauce. Enjoy!
