In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, milk, egg, minced garlic, chopped parsley, salt, black pepper, and dried oregano. Mix gently with your hands until all ingredients are evenly combined, being careful not to overmix.
Using your hands or a small cookie scoop, form the mixture into 1 1/2-inch meatballs. You should yield approximately 16-18 meatballs.
Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the meatballs in a single layer. Avoid overcrowding the pan, and work in batches if necessary.
Sear the meatballs for 2-3 minutes on each side, until they are browned all over. They do not need to be cooked all the way through at this stage.
Transfer the browned meatballs to a plate and set aside. If working in batches, repeat until all meatballs are browned.
Once all meatballs are browned, return them to the skillet. Pour the marinara sauce over the meatballs, ensuring they are fully coated.
Cover the skillet with a lid and reduce the heat to low. Simmer the meatballs in the marinara sauce for 20 minutes, stirring occasionally to prevent sticking. The meatballs are done when they are fully cooked through and reach an internal temperature of 165°F (74°C).
Serve Shannon's Meatballs hot over cooked spaghetti, in a sandwich roll, or on their own with a side of crusty bread. Enjoy!
