Preheat your oven to 375°F (190°C).
In a large mixing bowl, whisk together the eggs and milk or cream until well combined. Season with salt and black pepper. Set aside.
Heat the olive oil in an oven-safe skillet (such as cast iron) over medium heat.
Add the diced onion to the skillet and sauté for 2-3 minutes, until softened. Add the minced garlic and cook for another 30 seconds, stirring frequently.
Stir in the chopped vegetables and cook for 5-7 minutes, until tender and any excess moisture has been evaporated.
Add the diced leftover protein to the skillet and stir gently to combine. Distribute the ingredients evenly across the surface of the pan.
Pour the egg mixture over the vegetables and protein. Allow it to cook undisturbed on the stovetop for 2-3 minutes, until the edges begin to set.
Sprinkle the shredded or crumbled cheese evenly over the top of the mixture.
Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is puffed up and the center is set. A knife inserted into the middle should come out clean.
Carefully remove the skillet from the oven and let the frittata cool for 5 minutes.
Optional: Sprinkle fresh herbs over the top for added flavor and presentation.
Slice the frittata into wedges and serve immediately. Enjoy!
