Ingredients

  • 1 lb ground beef
  • 0.5 cup breadcrumb
  • 0.25 cup milk
  • 1 large egg
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup apricot preserves
  • 0.5 cup barbecue sauce
  • 1 tbsp soy sauce
  • 1 tbsp olive oil or nonstick spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper or greasing it with olive oil or nonstick spray.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, garlic powder, salt, and black pepper. Mix gently until just combined. Overmixing may result in tougher meatballs.

Step 3

Using your hands or a small scoop, form the mixture into 1-inch meatballs and place them on the prepared baking sheet, spaced slightly apart.

Step 4

Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and reach an internal temperature of 160°F (71°C).

Step 5

While the meatballs are baking, make the apricot glaze. In a medium saucepan over medium heat, combine the apricot preserves, barbecue sauce, and soy sauce. Stir until smooth and bring to a simmer. Let cook for 3-5 minutes, stirring occasionally, until slightly thickened.

Step 6

Once the meatballs are cooked, remove them from the oven and carefully transfer them to the saucepan with the apricot glaze. Toss gently to coat each meatball evenly in the sauce.

Step 7

Serve the glazed meatballs warm as an appetizer with toothpicks or as a main dish over steamed rice or mashed potatoes. Enjoy!
