Ingredients

  • 1 9-inch pie crust Unbaked pie crust
  • 3 whole Fresh lemons
  • 200 grams Granulated sugar
  • 3 whole Large eggs
  • 60 grams Unsalted butter
  • 2 tablespoons Cornstarch
  • 400 grams Canned cherry pie filling
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the unbaked 9-inch pie crust into a pie dish and trim the edges if necessary.

Step 2

Juice the fresh lemons to yield about 120 ml (1/2 cup) of lemon juice. Zest 2 of the lemons and set the zest aside.

Step 3

In a medium saucepan, combine the lemon juice, lemon zest, granulated sugar, cornstarch, and butter. Heat over medium-low heat, stirring continuously until the butter melts and the mixture begins to thicken slightly.
