Ingredients

  • 500 g Prawns (peeled and deveined)
  • 2 tbsp Shaoxing wine
  • 2 tbsp Light soy sauce
  • 1 tsp Dark soy sauce
  • 1.5 tbsp Sugar
  • 10 g Ginger (thinly sliced)
  • 2 cloves Garlic (minced)
  • 1 tsp Cornstarch
  • 2 tbsp Water
  • 2 tbsp Cooking oil
  • 2 stalks Green onions (chopped for garnish)

Directions

Step 1

Rinse the prawns and pat them dry with a paper towel. Toss them with 1 teaspoon of cornstarch until evenly coated. Set aside.

Step 2

In a small bowl, mix light soy sauce, dark soy sauce, sugar, Shaoxing wine, and 2 tablespoons of water to prepare the sauce. Stir until the sugar dissolves. Set aside.

Step 3

Heat 2 tablespoons of cooking oil in a large skillet or wok over medium heat. Add the ginger slices and cook for 30 seconds until fragrant.

Step 4

Add the minced garlic and stir for another 15 seconds, making sure it doesn’t burn.

Step 5

Increase the heat to medium-high and add the prepared prawns. Stir-fry for 2-3 minutes until the prawns turn pink and are almost fully cooked.

Step 6

Pour the prepared sauce into the skillet and toss the prawns to coat them evenly in the sauce. Cook for another 1-2 minutes until the sauce thickens slightly and the prawns are fully cooked.

Step 7

Transfer the prawns to a serving plate and garnish with chopped green onions. Serve immediately with steamed rice.
