Ingredients

  • 400 grams fresh Shanghai-style noodles (or thick wheat noodles)
  • 200 grams pork loin or chicken breast, thinly sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, finely grated
  • 3 stalks green onions, julienned
  • 1 medium carrot, julienned
  • 200 grams baby bok choy or Napa cabbage, chopped
  • 1 pinch white pepper

Directions

Step 1

Cook the Shanghai-style noodles according to the package instructions until just al dente. Drain, rinse with cold water, and set aside to prevent sticking.

Step 2

In a small bowl, combine 2 tablespoons soy sauce, dark soy sauce, oyster sauce, sugar, and white pepper. Stir well to create the sauce mixture and set aside.

Step 3

In another bowl, marinate the sliced pork or chicken with 1 tablespoon soy sauce, Shaoxing wine, and cornstarch. Mix well and let sit for 10 minutes.

Step 4

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated pork or chicken and stir-fry for 2-3 minutes until cooked through. Remove from the wok and set aside.
