  • 500 grams Boneless chicken thighs
  • 6 tablespoons Soy sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons Cornstarch
  • 1 teaspoon Sesame oil
  • 3 tablespoons Vegetable oil
  • 4 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Brown sugar
  • 2 tablespoons Rice vinegar
  • 125 milliliters Chicken stock
  • 2 stalks Green onions, sliced
  • 0.5 teaspoon Red chili flakes (optional)
  • 1 teaspoon Toasted sesame seeds (optional)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.

Step 2

In the bowl with the chicken, add 4 tablespoons of soy sauce, Shaoxing wine, and 1 tablespoon of cornstarch. Mix well to coat the chicken evenly. Let the chicken marinate for at least 15 minutes.

Step 3

In a small mixing bowl, combine the remaining 2 tablespoons of soy sauce, sesame oil, brown sugar, rice vinegar, chicken stock, and the remaining 1 tablespoon of cornstarch. Stir until the sugar dissolves and set aside.
