Ingredients

  • 500 grams Mutton or chicken (minced)
  • 100 grams Chana dal (split Bengal gram)
  • 1 large Onion (finely chopped)
  • 2 teaspoons Ginger (finely chopped)
  • 5 cloves Garlic (finely chopped)
  • 2 medium Green chilies (chopped)
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Black peppercorns
  • 1 inch Cinnamon stick
  • 3 Cardamom pods (green)
  • 3 Cloves
  • 1 Bay leaf
  • 1 large Egg
  • 2 tablespoons Fresh coriander leaves (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Red chili powder
  • 4 tablespoons Oil (for frying)

Directions

Step 1

Rinse the chana dal thoroughly and soak it in water for 1 hour.

Step 2

In a large saucepan, combine the minced mutton or chicken, soaked chana dal, ginger, garlic, green chilies, cumin seeds, black peppercorns, cinnamon stick, cardamom pods, cloves, bay leaf, salt, turmeric, and red chili powder.

Step 3

Add 1 cup of water to the pan and bring it to a boil. Cover and let it simmer over medium heat until the meat and lentils are fully cooked and the water has completely evaporated. Stir occasionally to prevent sticking.

Step 4

Once cooked, remove the bay leaf, cinnamon stick, and cardamom pods. Allow the mixture to cool to room temperature.

Step 5

Transfer the cooled mixture to a food processor and pulse into a fine paste. Do not add water.

Step 6

In a mixing bowl, combine the meat mixture with the chopped onion and coriander leaves. Crack in the egg and mix thoroughly.

Step 7

Shape the mixture into small, flat patties (around 2 inches in diameter).

Step 8

Heat oil in a frying pan over medium heat. Shallow-fry the kebabs in batches until golden brown and crisp on both sides. This should take about 2-3 minutes per side.

Step 9

Transfer the cooked kebabs to a plate lined with paper towels to drain excess oil.

Step 10

Serve hot with mint chutney, ketchup, or a side of onion rings and lemon wedges.
