Ingredients

  • 1 medium, chopped onion
  • 1 large, chopped red bell pepper
  • 3 cloves, minced garlic
  • 28 ounces (crushed or whole) canned tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 large eggs
  • 0.25 cup, chopped parsley
  • 0.25 cup, crumbled (optional) feta cheese

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add chopped onion and red bell pepper. Sauté until the onion becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes until the garlic is fragrant.

Step 4

Add the canned tomatoes and their juice to the skillet. Crush the tomatoes if using whole tomatoes.
