Ingredients

  • 1 pound beef tenderloin (cut into 1-inch cubes)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 1 teaspoon black pepper (freshly ground)
  • 3 cloves garlic cloves (minced)
  • 3 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 medium red onion (sliced into wedges)
  • 4 cups watercress or mixed salad greens
  • 2 tablespoons lime juice (freshly squeezed)
  • 0.5 teaspoons kosher salt
  • 0.25 teaspoons black pepper for dipping

Directions

Step 1

In a large mixing bowl, combine the beef tenderloin cubes, soy sauce, oyster sauce, fish sauce, sugar, black pepper, and minced garlic. Mix well to coat the beef, and let it marinate for at least 15 minutes, or up to 1 hour for more flavor.

Step 2

While the beef marinates, prepare the lime dipping sauce by mixing the lime juice, kosher salt, and black pepper in a small bowl. Set aside.

Step 3

Heat a large skillet or wok over high heat until very hot. Add 2 tablespoons of vegetable oil and swirl to coat the surface.

Step 4

Add the marinated beef cubes to the hot skillet in a single layer, making sure not to overcrowd the pan. Allow the beef to sear undisturbed for about 2 minutes to form a crust.

Step 5

Shake the skillet or toss the beef using tongs or a spatula to evenly brown all sides. Continue cooking for an additional 2-3 minutes, or until the beef is cooked to your preference. Remove the beef from the skillet and set aside.

Step 6

In the same skillet, reduce the heat to medium-high and add 1 tablespoon of vegetable oil and 2 tablespoons of butter. Once melted, add the red onion wedges and sauté for about 2 minutes, until slightly softened but still crisp.

Step 7

Arrange the watercress or mixed salad greens on a serving platter, and top with the seared beef and sautéed onions.

Step 8

Serve immediately with the lime dipping sauce on the side. Enjoy!
