Ingredients

  • 4 medium Russet potatoes
  • 1 cup All-purpose flour
  • 0.5 cup Cornstarch
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Dried oregano
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 1 cup Milk
  • 1 large Egg
  • 4 cups (for frying) Vegetable oil

Directions

Step 1

Wash the russet potatoes thoroughly and slice them into 1/8-inch thick rounds. Pat them dry with paper towels to remove excess moisture.

Step 2

In a bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, dried oregano, ground black pepper, and salt. Mix well to create a seasoned breading mixture.

Step 3

In a separate bowl, whisk together the milk and egg to create an egg wash.

Step 4

Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C). Ensure the oil is at the correct temperature using a thermometer for best results.

Step 5

Coat each potato slice in the egg wash, allowing any excess to drip off. Then dredge the slice in the seasoned breading mixture, pressing gently to make sure it adheres well.

Step 6

Carefully add the coated potato slices to the hot oil in small batches. Fry for 2-3 minutes per side, or until golden brown and crispy.

Step 7

Remove the cooked mojos from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.

Step 8

Repeat the coating and frying process with the remaining potato slices.

Step 9

Serve the Chicken Mojos warm with your favorite dipping sauces or as a side to your meal. Enjoy!
