Divide the ground beef into two 4-ounce portions and gently form them into loosely packed balls. Do not overwork the meat.
Heat a cast-iron skillet or griddle over medium-high heat until very hot. Meanwhile, lightly butter the insides of the potato buns.
Place the buns, buttered side down, onto the skillet and toast until golden brown. Remove and set aside.
