  • 250 grams Paneer
  • 1 large Onion
  • 2 medium Tomatoes
  • 1 inch piece Ginger
  • 3 Garlic cloves
  • 2 Green chilies
  • 10 Cashew nuts
  • 0.5 cup Full-fat cream
  • 1 cup Milk
  • 2 tablespoons Butter
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 0.5 teaspoon Sugar
  • 2 tablespoons Cilantro leaves
  • 1 teaspoon Lemon juice

Directions

Step 1

Cut paneer into 1-inch cubes and set aside.

Step 2

Soak 10 cashew nuts in hot water for 10 minutes, then blend them into a smooth paste using a little water.

Step 3

Finely chop 1 large onion, and make a puree of 2 medium tomatoes.

Step 4

Grind 1-inch ginger, 3 garlic cloves, and 2 green chilies into a paste.

Step 5

Heat 1 tablespoon oil and 2 tablespoons butter in a pan over medium heat.

Add 1 teaspoon cumin seeds and let them splutter.

Step 7

Add chopped onion and sauté until golden brown.

Step 8

Add the ginger-garlic-chili paste and sauté for 2 minutes until the raw smell disappears.

Add the tomato puree and cook for 5 minutes until the oil separates.

Mix in 0.5 teaspoon turmeric powder, 1 teaspoon coriander powder, 0.5 teaspoon red chili powder, and 1 teaspoon salt.

Add the cashew paste and stir well.

Pour in 1 cup milk and simmer the mixture for 5 minutes, stirring occasionally.

Add 250 grams paneer cubes and 0.5 cup full-fat cream, mixing gently to avoid breaking the paneer.

Stir in 1 teaspoon garam masala and 0.5 teaspoon sugar.

Step 15

Cook for another 5 minutes on low heat.

Step 16

Turn off the heat and add 1 teaspoon lemon juice.

Step 17

Garnish with 2 tablespoons chopped cilantro leaves.

Step 18

Serve hot with naan or steamed rice.
