Ingredients

  • 250 grams fresh crab meat
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup grated Gruyère cheese
  • 4 pieces large eggs, separated
  • 1 teaspoon lime zest
  • 1 teaspoon fresh thyme, chopped
  • 0.5 piece scotch bonnet pepper, finely chopped (optional)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons bread crumbs
  • 1 tablespoon oil or additional butter (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease four individual ramekins with oil or butter. Sprinkle bread crumbs inside the ramekins, tilting to coat the sides evenly. Discard any excess crumbs.

Step 2

In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook, stirring constantly, for 1-2 minutes to make a roux.

Step 3

Gradually whisk in the milk, and continue stirring until the mixture thickens to a smooth béchamel sauce (around 3-4 minutes). Remove from heat.

Step 4

Stir in grated Gruyère cheese, lime zest, chopped thyme, scotch bonnet pepper (if using), salt, and black pepper. Mix until the cheese is melted and the mixture is well-combined.

Step 5

Fold in the fresh crab meat gently, ensuring it is evenly distributed. Allow the mixture to cool slightly.

Step 6

In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form.

Step 7

Whisk the egg yolks into the cooled béchamel mixture, then gently fold in one-third of the whipped egg whites to lighten the base.

Step 8

Carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture.

Step 9

Divide the soufflé mixture evenly among the prepared ramekins, filling them about three-quarters full.

Step 10

Place the ramekins on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the soufflés are puffed and golden. Avoid opening the oven during baking to prevent them from collapsing.

Step 11

Serve immediately while the soufflés are still warm and airy. Enjoy a taste of the Caribbean with every bite!
