  • 250 grams All-purpose flour
  • 250 ml Water
  • 60 grams Butter
  • 1 pinch Salt
  • 4 large Eggs
  • 500 grams Ricotta cheese
  • 100 grams Powdered sugar
  • 50 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 10 pieces Candied cherries
  • 1 liter Vegetable oil (for frying)

Directions

Step 1

In a medium saucepan, combine the water, butter, and a pinch of salt. Heat over medium heat until the butter melts, and the mixture begins to boil.

Remove the saucepan from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a thick, smooth dough and pulls away from the sides of the pan.

Return the saucepan to low heat and continue stirring for 2-3 minutes to dry out the dough slightly.

Transfer the dough to a mixing bowl. Allow it to cool for 5 minutes.
