Ingredients

  • 3 cups All-purpose flour
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 3 tablespoons Olive oil
  • 1 cup Warm water (110°F / 43°C)
  • 1 pound Ground lamb or beef
  • 1 medium Tomato, finely diced
  • 1 small Onion, finely chopped
  • 2 tablespoons Lemon juice
  • 2 tablespoons Plain yogurt
  • 2 Garlic cloves, minced
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground allspice
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.

Step 2

Add olive oil and warm water to the dry ingredients. Mix until the dough starts to come together.

Step 3

Knead the dough on a lightly floured surface for about 8–10 minutes, or until smooth and elastic.

Step 4

Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Step 5

While the dough is rising, prepare the topping. In a skillet over medium heat, cook the ground lamb or beef until browned and fully cooked. Drain any excess fat.

Step 6

Add the diced tomato, chopped onion, lemon juice, yogurt, minced garlic, ground cinnamon, ground allspice, paprika, salt, and black pepper to the skillet. Stir well and cook for 3–4 minutes to let the flavors combine. Remove from heat and set aside.

Step 7

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 8

Punch down the risen dough and divide it into 8 equal portions. Roll each portion into a ball and flatten it into a small circle, approximately 5–6 inches in diameter.

Step 9

Place the dough circles on the prepared baking sheet, leaving some space between them.

Step 10

Spoon 2–3 tablespoons of the meat mixture onto each dough circle, spreading it evenly and leaving a small border around the edges.

Step 11

Bake the sfihas in the preheated oven for 12–15 minutes, or until the edges of the dough are golden and crispy.

Step 12

Remove from the oven and let cool slightly. Garnish with chopped parsley, if desired, and serve warm.
