In a small bowl, dissolve the active dry yeast and sugar in 100 ml of the warm water. Let the mixture sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and pour in the yeast mixture.
Gradually add the remaining warm water to the flour mixture while stirring with a wooden spoon or your hand. Mix until the dough is sticky and elastic, but not too dry.
Cover the bowl with a damp cloth or plastic wrap and let the dough rest in a warm place for about 1.5 to 2 hours, or until it has doubled in size.
Once the dough has risen, heat the vegetable oil in a deep frying pan or pot to 180°C (350°F). Test the oil by dropping in a small piece of dough; it should sizzle and rise to the surface.
Wet your hands with water to prevent sticking and take a small portion of dough (about the size of a golf ball). Flatten it slightly and use your thumb to create a hole in the center, forming a doughnut shape.
Carefully place the dough into the hot oil, frying 3-4 doughnuts at a time. Be careful not to overcrowd the pan.
Fry the Sfenj for about 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
Repeat with the remaining dough, wetting your hands as needed to handle the sticky dough.
If desired, dust the warm Sfenj with powdered or granulated sugar before serving. Enjoy immediately for the best taste and texture.
