Ingredients

  • 100 grams Vermicelli (seviyan)
  • 2 tablespoons Ghee
  • 1 liter Milk
  • 100 grams Sugar
  • 3 Cardamom pods (crushed or powdered)
  • 2 tablespoons Chopped almonds
  • 2 tablespoons Chopped cashews
  • 1 tablespoon Golden raisins
  • 1 pinch Saffron strands (optional)

Directions

Step 1

Heat ghee in a pan over medium heat.

Step 2

Add the vermicelli to the pan and roast it until golden brown, stirring frequently to avoid burning. Set aside.

Step 3

In a large, heavy-bottomed saucepan, bring the milk to a gentle boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.

Step 4

Lower the heat to medium-low and add the roasted vermicelli to the boiling milk. Stir well to combine.

Step 5

Simmer the mixture, stirring occasionally, for about 10–12 minutes, or until the vermicelli softens and the mixture thickens slightly.

Step 6

Add the sugar, cardamom powder or crushed cardamom pods, and saffron strands (if using) to the mixture. Stir well to dissolve the sugar completely.

Step 7

In a small pan, heat a teaspoon of ghee and lightly toast the chopped almonds, chopped cashews, and raisins until golden and fragrant. Add them to the pudding mixture.

Step 8

Cook the dessert for another 5–7 minutes, or until it reaches your desired consistency. Note: The pudding will continue to thicken as it cools.

Step 9

Remove from heat and let it cool slightly. Serve warm or chilled, garnished with additional nuts if desired.
