Ingredients

  • 4 whole Seville oranges
  • 1 whole Lemon
  • 120 grams Unsalted butter
  • 250 grams Caster sugar
  • 4 whole Large eggs
  • 2 whole Egg yolks

Directions

Step 1

Wash the Seville oranges and lemon thoroughly, then zest all fruits into a large, heatproof bowl. Be careful to zest only the outer peel, avoiding the bitter white pith.

Step 2

Juice the Seville oranges and lemon. You should have around 200ml of juice. Strain the juice to remove any seeds or pulp.

Step 3

Cut the unsalted butter into small cubes and set aside.

Step 4

In the heatproof bowl with the zest, whisk together the caster sugar, large eggs, and extra egg yolks until fully combined.

Step 5

Place the bowl over a saucepan of gently simmering water, ensuring the bottom of the bowl does not touch the water.

Step 6

Add the strained orange and lemon juice to the mixture, whisking continuously as it starts to warm up.

Step 7

Once combined, gradually add the butter cubes, stirring gently but constantly as the butter melts into the curd mixture.

Step 8

Continue to cook the mixture over low heat, stirring constantly with a wooden spoon or silicone spatula, until the curd thickens. This process can take about 10–15 minutes. The curd is ready when it coats the back of the spoon and leaves a clean line when you run your finger through it.

Remove the bowl from the heat and immediately pour the curd through a fine-mesh sieve into sterilized jars to remove the zest and ensure a silky texture.

Let the curd cool to room temperature. Seal the jars and refrigerate. The curd will thicken further as it chills.
