Ingredients

  • 250 grams Cherry tomatoes

  • 1 Red bell pepper

  • 200 grams Canned white beans (drained and rinsed)
  • 3 tablespoons Extra virgin olive oil
  • 1.5 tablespoons Sherry vinegar
  • 1 clove Garlic
  • 1 teaspoon Paprika (preferably smoked)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 4 slices Crusty bread (optional)

Directions

Step 1

Wash and dry all the vegetables thoroughly.

Step 2

Halve the cherry tomatoes and add them to a large salad bowl.

Step 3

Peel the cucumber, if desired, and dice it into bite-sized pieces. Add it to the bowl.

Core and dice the red bell pepper into small chunks, then add it to the salad.
