  • 4 cups Spinach
  • 3 cloves Garlic
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 2 cups Mozzarella cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 cup Heavy cream
  • 0.5 cups Breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Prepare the vegetables: Thinly slice the zucchini, yellow squash, carrots, potatoes, and red bell pepper. Roughly chop the onion, and mince the garlic.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the onion and garlic, cooking until fragrant, about 3 minutes. Add the spinach and cook until wilted, about 2-3 minutes. Set aside.

Step 4

In a small bowl, combine the heavy cream, dried basil, dried oregano, salt, and black pepper. Stir well and set aside.

Grease a 9x13-inch casserole dish with 1 tablespoon of olive oil.
