  • 2 cups Cheddar cheese (shredded)
  • 2 cups Spinach (fresh, chopped)
  • 1 cup Tomatoes (diced)
  • 0.5 cup Green onions (sliced)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish using butter or non-stick cooking spray.

Step 2

In a skillet over medium heat, melt the butter. Add the shredded potatoes and cook until they are just softened, about 5-7 minutes. Season with salt and pepper.

Layer the cooked potatoes evenly across the bottom of the prepared baking dish to form the first layer.
