Ingredients

  • 3 cups cooked shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 can (15 oz, drained) whole kernel corn
  • 1 can (15 oz, rinsed and drained) black beans
  • 1 can (14 oz) chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 flour tortillas
  • 3 cups shredded Mexican cheese blend

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch casserole dish lightly with nonstick spray.

Step 2

In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, Rotel diced tomatoes with green chilies, corn, black beans, chicken broth, ground cumin, chili powder, garlic powder, and onion powder. Mix until well combined.

Step 3

Spread a thin layer of the soup mixture on the bottom of the prepared casserole dish to prevent sticking.

Step 4

Place a layer of flour tortillas (about 2-3, torn into pieces to fit) over the soup mixture.

Step 5

Spread a third of the shredded chicken over the tortillas, followed by a third of the soup mixture and a third of the shredded cheese.

Step 6

Repeat the layers (tortillas, chicken, soup mixture, cheese) two more times, finishing with a generous layer of cheese on top.

Step 7

Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 8

Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

Step 9

Allow the casserole to rest for 5-10 minutes before serving. Serve warm and enjoy!
