  • 2 large carrots, diced
  • 2 large celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 8 cups vegetable broth
  • 1 14-ounce can canned diced tomatoes (with juice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 whole bay leaf
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse all the dried beans under cold water to remove any debris or dirt. Soak them in a large bowl filled with water overnight or for at least 8 hours. Drain and rinse before cooking.
