Ingredients

  • 2 tablespoons olive oil
  • 1 medium (diced) yellow onion
  • 3 minced garlic cloves
  • 28 ounces canned crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 4 cups (loosely packed) baby spinach
  • 1 teaspoon granulated sugar
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (freshly ground) black pepper
  • 2 tablespoons butter
  • 0.25 cup grated Parmesan cheese (optional, for serving)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add diced onion and sauté for 5-7 minutes until softened and translucent.

Step 3

Stir in garlic and cook for 1 minute until fragrant.

Step 4

Pour in the crushed tomatoes and vegetable broth. Stir to combine.

Step 5

Add sugar, dried basil, dried thyme, salt, and black pepper. Bring the mixture to a boil.

Step 6

Reduce the heat to low and let the soup simmer for 15 minutes, allowing flavors to meld.

Step 7

Turn off the heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and puree in batches.

Step 8

Stir in heavy cream and butter, letting it melt into the soup.

Step 9

Add the baby spinach and stir until wilted, about 2-3 minutes.

Step 10

Taste the soup and adjust seasoning with more salt or pepper if needed.

Step 11

Ladle the soup into bowls and garnish with grated Parmesan cheese, if desired. Serve warm.
