Ingredients

  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 pinch Asafoetida
  • 1 large, finely chopped Onion
  • 1 finely chopped Green chili
  • 1 tablespoon Ginger-garlic paste
  • 2 medium, pureed Tomato
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 cups Water
  • 1.5 cups Sev
  • 2 tablespoons, finely chopped Cilantro

Directions

Step 1

Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter.

Step 2

Add cumin seeds and asafoetida, and sauté for a few seconds until fragrant.

Step 3

Add finely chopped onions and green chili. Cook until the onions become translucent.

Step 4

Add ginger-garlic paste and sauté until the raw smell disappears.

Step 5

Stir in the tomato puree. Cook the mixture until the oil starts to separate from the sides.

Step 6

Add turmeric, red chili powder, coriander powder, and cumin powder. Mix well and cook for another minute.

Step 7

Pour in water, stir, and bring the mixture to a boil.

Step 8

Reduce the heat and simmer for about 10 minutes, allowing the flavors to meld and the gravy to thicken slightly.

Add garam masala and salt, stirring to ensure it is well incorporated.

Once the gravy reaches desired consistency, turn off the heat.

Just before serving, spread your desired quantity of sev over the curry.
