Ingredients

  • 4 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cups Whole milk
  • 2 teaspoons Salt
  • 1 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion
  • 3 Garlic cloves
  • 2 small Carrots
  • 2 Celery stalks
  • 1 pound Ground beef
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 1 tablespoon Worcestershire sauce
  • 0.5 cups Frozen peas
  • 0.5 cups Frozen corn

Directions

Step 1

Peel the potatoes and cut them into evenly-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer until the potatoes are fork-tender, about 15-20 minutes.

Step 2

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Dice the onion, mince the garlic, and chop the carrots and celery into small pieces.

Step 3

Add the onion, garlic, carrots, and celery to the skillet. Sauté until softened, about 5 minutes.

Step 4

Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess grease.

Step 5

Stir in the tomato paste and cook for 1 minute to caramelize. Then add the beef broth, Worcestershire sauce, peas, and corn. Stir to combine. Simmer for 5 minutes to thicken slightly. Season with 1 teaspoon of salt and 0.5 teaspoons of black pepper.

Step 6

Preheat your oven to 375°F (190°C).

Step 7

Once the potatoes are cooked, drain them and return them to the pot. Add butter, milk, 1 teaspoon of salt, and 0.5 teaspoons of black pepper. Mash until smooth and creamy.

Step 8

Transfer the beef and vegetable mixture to a baking dish (approximately 9x9 inches). Spread it out in an even layer.

Step 9

Spoon the mashed potatoes on top of the beef mixture, spreading them out evenly. Use a fork to create texture on the surface for browning.

Step 10

Bake in the preheated oven for 20 minutes. For an extra golden-brown crust, broil for an additional 2-3 minutes, keeping a close eye to prevent burning.

Step 11

Remove from the oven and let the Settler's Pie cool for 5-10 minutes before serving. Enjoy!
