Ingredients

  • 3.5 cups Whole wheat flour
  • 0.5 cups All-purpose flour
  • 0.25 cups Sesame seeds
  • 2.25 teaspoons Active dry yeast
  • 1.5 cups Warm water (110°F/45°C)
  • 2 tablespoons Honey
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 2 tablespoons Additional sesame seeds for topping

Directions

Step 1

In a large mixing bowl, combine the warm water, honey, and active dry yeast. Stir gently and let the mixture sit for 5-10 minutes until it becomes frothy.

Step 2

Add the olive oil, salt, and sesame seeds to the yeast mixture. Stir to combine.

Step 3

Gradually add the whole wheat flour, one cup at a time, mixing with a wooden spoon or stand mixer fitted with a dough hook. Once incorporated, add the all-purpose flour to create a slightly sticky dough.

Step 4

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until the dough becomes smooth and elastic. Alternatively, knead with the dough hook in a stand mixer for 5-6 minutes.

Step 5

Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free area for about 1 hour, or until doubled in size.

Step 6

After the dough has risen, punch it down to release the air. Knead it briefly and shape it into a loaf.

Step 7

Grease a loaf pan and place the shaped dough into the pan. Cover again with the kitchen towel and let it rise for another 30 minutes, or until it rises just above the edge of the pan.

Step 8

Preheat your oven to 375°F (190°C). Before baking, brush the top of the dough with a little water and sprinkle with the additional sesame seeds.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the bread sounds hollow when tapped on the bottom or reaches an internal temperature of 190°F (88°C).

Step 10

Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
