Ingredients

  • 200 grams Granulated sugar
  • 115 grams Unsalted butter
  • 2 tablespoons Honey
  • 2 tablespoons Water
  • 0.25 teaspoons Salt
  • 1 teaspoons Vanilla extract
  • 60 grams Toasted sesame seeds

Directions

Step 1

Line a baking sheet with parchment paper and set it aside.

Step 2

Toast the sesame seeds in a dry skillet over medium heat for 2-3 minutes until golden and fragrant. Once toasted, pour them into a small bowl to cool.

Step 3

In a medium-sized saucepan, combine the sugar, butter, honey, water, and salt. Heat the mixture over medium heat, stirring gently until the sugar dissolves and the butter is melted.

Step 4

Stop stirring and allow the mixture to come to a boil. Attach a candy thermometer to the side of the saucepan and continue to cook, without stirring, until the temperature reaches 300°F (149°C), also known as the hard crack stage. This will take about 10-12 minutes. Keep a close eye on it to avoid burning.

Step 5

Once the toffee reaches 300°F, immediately remove it from the heat and stir in the vanilla extract.

Step 6

Quickly pour the hot toffee mixture onto the prepared baking sheet and spread it evenly using a silicone spatula or the back of a spoon.

Step 7

Sprinkle the toasted sesame seeds over the top of the hot toffee, pressing lightly with a spatula to adhere them to the surface.

Step 8

Let the toffee cool completely at room temperature, about 30 minutes, until it hardens.

Once the toffee is firm, break it into bite-sized pieces using your hands or a knife.

Store the sesame toffee in an airtight container at room temperature for up to 2 weeks.
