Heat a pan over medium heat and add the white sesame seeds. Roast them lightly for about 3-5 minutes until they turn light golden and start to splutter. Keep stirring continuously to prevent them from burning.
Once roasted, remove the sesame seeds from the heat and let them cool completely. Once cooled, transfer them to a grinder and pulse briefly to crush them coarsely. Do not grind them to a fine powder.
In the same pan, add jaggery and water. Heat over medium flame until the jaggery dissolves completely, stirring occasionally.
Once the jaggery is fully melted, reduce the heat to low and continue to cook until the mixture reaches a soft ball consistency. To check, drop a small amount of the hot syrup into a bowl of water. If it forms a soft, flexible ball, it's ready.
Add the crushed sesame seeds to the hot jaggery syrup along with the cardamom powder. Mix quickly and thoroughly so that the sesame seeds are evenly coated with the syrup.
Remove the mixture from the heat and let it cool for a minute until it is warm but manageable to handle.
Grease your palms with a little ghee, take small portions of the mixture and shape them into small, round ladoos.
Let the laddu cool completely at room temperature. Once cooled, store them in an airtight container.
