Ingredients

  • 200 grams All-purpose flour
  • 115 grams Unsalted butter (softened)
  • 100 grams Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 60 grams White sesame seeds
  • 10 grams Black sesame seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, salt, and baking powder. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together with a hand mixer or stand mixer until light and fluffy, about 3 minutes.

Step 4

Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.

Step 5

Gradually add the dry flour mixture to the wet ingredients, mixing just until the dough comes together. Do not overmix.

Step 6

Fold in 40 grams of the white sesame seeds, ensuring they are evenly distributed throughout the dough.

Step 7

Scoop out small portions of the dough (about 1 tablespoon each) and roll them into balls between your palms.

Step 8

In a shallow bowl or plate, spread out the remaining 20 grams of white sesame seeds. Roll each dough ball in the sesame seeds to coat the outside.

Step 9

Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart. If desired, sprinkle a few black sesame seeds on top for garnish.

Step 10

Using the bottom of a glass or your palm, gently flatten each ball into a disk, about 1/2-inch thick.

Step 11

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Do not overbake to ensure the cookies remain tender.

Step 12

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 13

Serve and enjoy! Store the cookies in an airtight container at room temperature for up to one week.
