Ingredients

  • 1 cup Orzo pasta
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 1 tablespoon Toasted sesame oil
  • 2 cloves Garlic
  • 1 tablespoon Sesame seeds
  • 2 cups Vegetable broth
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Peel the onion and slice it into thin rounds. Set aside.

Step 2

Finely mince the garlic cloves and chop the parsley. Reserve for later use.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook for 3-4 minutes until they begin to soften.

Step 4

Increase the heat to medium-high and continue cooking the onions, stirring occasionally, until they become golden and slightly charred, about 8-10 minutes. Remove the onions from the skillet and set them aside.

Step 5

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and toast for 30 seconds until fragrant.

Step 6

Stir in the orzo and sauté for 2-3 minutes, allowing it to lightly toast.

Step 7

Add the vegetable broth, toasted sesame oil, salt, and black pepper to the skillet. Bring to a simmer and cook the orzo, stirring occasionally, for 8-10 minutes or until the liquid is absorbed and the orzo is tender.

Step 8

While the orzo cooks, toast the sesame seeds in a dry pan over low heat for 1-2 minutes until lightly golden. Remove from heat.

Step 9

Once the orzo is cooked, fold in the charred onions and chopped parsley. Adjust seasoning with additional salt and pepper if needed.

Step 10

Serve the sesame orzo warm, topped with the toasted sesame seeds for garnish.
